Ingredients

  • 1.5 lbs. chicken breast, cut into 1 in. chunks
  • 1.5 cups minute white rice
  • ½ medium yellow onion, sliced
  • 2 medium bell peppers, sliced
  • 4 oz. canned green chiles
  • 15 oz. canned pinto beans, drained and rinsed
  • 15 oz. canned tomato sauce
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • ½ tablespoon ground cumin
  • ½ tablespoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • teaspoon pepper
  • ½ cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F and prepare a large casserole dish with nonstick cooking spray.
  2. Combine all ingredients except for the shredded cheese in the casserole dish and mix well.
  3. Cover the dish with aluminum foil and bake for 45 minutes.
  4. Remove the foil, stir the casserole, and top with shredded cheese.
  5. Bake uncovered for an additional 5 minutes.
  6. Let the casserole rest for 10 minutes before serving, and add toppings like Greek yogurt, salsa, or green onions.
