Instructions
- Preheat the oven to 400°F.
- Shred the cooked chicken and set aside.
- In a large casserole dish, combine the diced onion, uncooked rice, cumin, chili powder, oregano, and garlic powder.
- In a medium bowl, whisk together the chicken broth, tomato paste, and olive oil, then pour over the rice mixture and mix well.
- Add the shredded chicken, black beans, and corn to the casserole dish and mix to combine.
- Cover the dish with foil and bake for 35-40 minutes.
- Remove the foil, sprinkle cheese on top, and bake for an additional 5-10 minutes until the cheese is melted.
- Top with cilantro, green onion, and avocado before serving.
