Ingredients

Main Ingredients

  • 1 pound boneless chicken breast (cooked and shredded)
  • 1 each yellow or red onion, diced
  • 1 cup white rice (uncooked)
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • 1 tablespoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 2 ½ cups chicken broth
  • 3 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 1 can (14 oz) black beans, drained
  • 1 can (14 oz) corn, drained
  • ½ cup Mexican blend cheese (or non-dairy cheese shreds)

Optional Garnishes

  • to taste chopped cilantro
  • to taste chopped green onion
  • to taste diced avocado
  • to serve tortilla chips

Instructions

  1. Preheat the oven to 400°F.
  2. Shred the cooked chicken and set aside.
  3. In a large casserole dish, combine the diced onion, uncooked rice, cumin, chili powder, oregano, and garlic powder.
  4. In a medium bowl, whisk together the chicken broth, tomato paste, and olive oil, then pour over the rice mixture and mix well.
  5. Add the shredded chicken, black beans, and corn to the casserole dish and mix to combine.
  6. Cover the dish with foil and bake for 35-40 minutes.
  7. Remove the foil, sprinkle cheese on top, and bake for an additional 5-10 minutes until the cheese is melted.
  8. Top with cilantro, green onion, and avocado before serving.
