Beef Burrito Casserole

Ingredients

  • 1 Tbsp cooking oil
  • ½ lb. ground beef
  • 1 clove garlic, minced
  • 1 pinch salt
  • 4 cups cooked rice
  • 1 15 oz. can black beans
  • 1 16 oz. jar salsa
  • 4 pieces green onions, divided
  • ½ Tbsp chili powder
  • 4 oz. cream cheese
  • 1 cup shredded cheddar

Instructions

  1. Preheat the oven to 350ºF.
  2. In a skillet, heat the cooking oil and cook the ground beef with garlic and salt until browned.
  3. Drain excess fat if necessary.
  4. Rinse and drain the black beans, and slice the green onions.
  5. In a large bowl, combine the beans, half of the green onions, cooked rice, browned beef, salsa, and chili powder.
  6. Coat a casserole dish with non-stick spray and spread half of the mixture in the bottom.
  7. Add dollops of cream cheese on top, then cover with the remaining mixture.
  8. Cover the dish with foil and bake for 25 minutes.
  9. Remove the foil, add shredded cheddar on top, and bake for an additional 5-10 minutes until melted.
  10. Top with remaining green onions before serving.
