Beef Burrito Casserole

Instructions
- Preheat the oven to 350ºF.
- In a skillet, heat the cooking oil and cook the ground beef with garlic and salt until browned.
- Drain excess fat if necessary.
- Rinse and drain the black beans, and slice the green onions.
- In a large bowl, combine the beans, half of the green onions, cooked rice, browned beef, salsa, and chili powder.
- Coat a casserole dish with non-stick spray and spread half of the mixture in the bottom.
- Add dollops of cream cheese on top, then cover with the remaining mixture.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil, add shredded cheddar on top, and bake for an additional 5-10 minutes until melted.
- Top with remaining green onions before serving.
