Ground Beef Taco Casserole Bake

Ingredients

The casserole

  • 1 pound ground beef, turkey, chicken, or sausage
  • 15.5 oz canned diced tomatoes and chilies (drained and pat dry)
  • 15.5 oz canned black beans (drained and pat dry)
  • 1 cup whole kernel corn (frozen, thawed and drained or canned, drained)
  • 6 count 6-inch tortillas (loosely torn into pieces)
  • 1 cup salsa
  • 1 cup grated cheddar cheese
  • 1 cup grated Monterey Jack cheese

The seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste salt and pepper
  • 1 teaspoon cayenne pepper (optional for spicy)

Optional toppings

  • 1-2 cups crushed tortilla chips or Doritos
  • to taste shredded lettuce
  • to taste black olives
  • to taste sour cream

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a skillet over medium heat, brown the ground meat and drain excess fat.
  3. Add taco seasoning to the meat and stir to combine.
  4. Stir in black beans, corn, and diced tomatoes, cooking until heated through.
  5. Layer half of the tortilla pieces in a 9x13 baking dish.
  6. Spoon half of the meat mixture over the tortillas and optionally add half of the cheese.
  7. Add another layer of tortillas and the remaining meat mixture, then top with salsa and remaining cheese.
  8. Bake uncovered for 25-30 minutes until cheese is melted and bubbly.
  9. Cool before serving and sprinkle optional toppings as desired.
