Easy Taco Casserole

Ingredients

  • 1 lb 85% ground beef
  • ½ small yellow onion, minced
  • 1 large red pepper, finely diced
  • 1 can green chiles (4.5 oz)
  • 2 tablespoons taco seasoning
  • ½ cup salsa
  • 1 can black beans (15 oz), rinsed and strained
  • 1 can sweet corn (15 oz), rinsed and strained
  • 2-4 cups tortilla chips
  • 8 oz Mexican shredded cheese

Instructions

  1. 1. Sauté ground beef in a large cast iron pan for 3-5 minutes until partially cooked, then set aside.
  2. 2. In the same pan, sauté minced yellow onion and diced red pepper in the beef grease for 3-4 minutes until the onion is translucent.
  3. 3. Add the beef back to the pan along with green chiles, taco seasoning, and salsa; sauté for 1-2 more minutes until bubbling.
  4. 4. Turn off the burner and layer black beans, sweet corn, and tortilla chips on top, then sprinkle with shredded cheese.
  5. 5. Bake in the oven at 350ºF for 10 minutes or until the cheese is fully melted.
