Easy Taco Casserole

black beans (15 oz), rinsed and strained

sweet corn (15 oz), rinsed and strained

Instructions
- 1. Sauté ground beef in a large cast iron pan for 3-5 minutes until partially cooked, then set aside.
- 2. In the same pan, sauté minced yellow onion and diced red pepper in the beef grease for 3-4 minutes until the onion is translucent.
- 3. Add the beef back to the pan along with green chiles, taco seasoning, and salsa; sauté for 1-2 more minutes until bubbling.
- 4. Turn off the burner and layer black beans, sweet corn, and tortilla chips on top, then sprinkle with shredded cheese.
- 5. Bake in the oven at 350ºF for 10 minutes or until the cheese is fully melted.
