Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium-high heat and brown the ground beef for 8-10 minutes, then drain excess grease.
- Stir in taco seasoning and water, simmer until the water evaporates.
- Add diced bell peppers, black beans, and corn to the skillet, cooking until peppers are soft.
- Spread a thin layer of salsa on the bottom of a baking dish, then layer the beef and vegetable mixture on top.
- Dollop sour cream over the beef mixture and spread evenly.
- Pour remaining salsa over the sour cream and sprinkle shredded cheese on top.
- Bake for 20-25 minutes until cheese is melted and bubbly.
