Ingredients

The casserole

  • 2 tbsp Olive oil
  • 1 ½ lb Ground beef
  • 3 tbsp Taco seasoning
  • ¾ cup Water
  • 2 large Bell peppers (diced)
  • 1 15-oz can Black beans (drained and rinsed)
  • 1 15-oz can Corn (drained)
  • 2 cups Salsa
  • ½ cup Sour cream
  • 2 cups Mexican blend cheese (shredded)

Optional toppings

  • to taste Sour cream
  • to taste Fresh cilantro
  • to taste Lettuce (shredded)
  • to taste Roma tomatoes (diced)
  • to taste Black olives (sliced)
  • to taste Avocado (sliced or diced)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium-high heat and brown the ground beef for 8-10 minutes, then drain excess grease.
  3. Stir in taco seasoning and water, simmer until the water evaporates.
  4. Add diced bell peppers, black beans, and corn to the skillet, cooking until peppers are soft.
  5. Spread a thin layer of salsa on the bottom of a baking dish, then layer the beef and vegetable mixture on top.
  6. Dollop sour cream over the beef mixture and spread evenly.
  7. Pour remaining salsa over the sour cream and sprinkle shredded cheese on top.
  8. Bake for 20-25 minutes until cheese is melted and bubbly.
