Ingredients

The filling

  • 2 teaspoons vegetable oil
  • 1 pound ground beef
  • ½ cup onion, finely diced
  • 1 packet taco seasoning
  • 15 ounces diced tomatoes, drained
  • ¾ cup frozen corn kernels, thawed

The layers

  • 2 cups red enchilada sauce
  • 8 6-inch tortillas, halved
  • 2 cups shredded cheddar cheese
  • cooking spray

Optional garnishes

  • salsa
  • sour cream
  • cilantro
  • avocado

Instructions

  1. Preheat the oven to 350°F and coat a casserole dish with cooking spray.
  2. Heat the oil in a pan over medium heat, add the ground beef, and cook until browned.
  3. Add the onion and cook until softened, then stir in the taco seasoning and water.
  4. Add the tomatoes and corn to the beef mixture and stir to combine.
  5. Spread some enchilada sauce in the baking dish and layer half of the tortillas over it.
  6. Add a third of the beef mixture, half a cup of cheese, and a third of the enchilada sauce.
  7. Repeat the layering process two more times, finishing with tortillas and the remaining enchilada sauce on top.
  8. Sprinkle the remaining cheese over the top, cover with foil, and bake for 30 minutes.
  9. Uncover and bake for an additional 5-10 minutes until the cheese is melted and browned.
  10. Let sit for 5 minutes, then add garnishes if desired and serve.
