Mexican Casserole

Ingredients

The base

  • 2 cups cooked brown rice
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 cup plain nonfat Greek yogurt
  • 1 can reduced fat refried black beans (15 ounces)
  • 1 10-ounce can tomatoes with green chiles

Vegetables and spices

  • 1 yellow onion chopped
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 2 cloves minced garlic
  • 2 tablespoons chili powder
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon cayenne pepper

Cheese

  • ¾ cup freshly grated sharp cheddar cheese
  • ¾ cup freshly grated mozzarella cheese

Garnishes

  • to taste fresh cilantro
  • to taste chopped green onions

Instructions

  1. Cook the rice if not already cooked.
  2. Preheat the oven to 350°F and prepare a baking dish with nonstick spray.
  3. In a skillet, heat olive oil and sauté onion and bell peppers until softened.
  4. Add ground beef and spices, cooking until the beef is no longer pink.
  5. Stir in garlic, then remove from heat and mix in rice and Greek yogurt.
  6. Layer refried beans in the baking dish, followed by part of the cheese.
  7. Add tomatoes with green chiles, then top with the beef mixture and remaining cheese.
  8. Bake uncovered for 15 minutes, then broil for 3-4 minutes to brown the cheese.
  9. Let rest for 5 minutes, then garnish with cilantro and green onions before serving.
