Ground Beef Taco Casserole

Instructions
- Preheat the oven to 350°F and spray a 9 x 13 casserole dish with cooking spray.
- In a large skillet, cook the ground beef over medium-high heat for 5 minutes.
- Add the chopped onion and cook for an additional 5 minutes until the onion is tender and the beef is browned.
- Add minced garlic and cook for 30 seconds.
- Stir in taco seasoning, salt, and apple cider vinegar, then add one can of Ro-tel tomatoes and cook for 3 more minutes.
- In a bowl, mix the second can of Ro-tel with refried beans.
- Spread the bean mixture in the bottom of the prepared casserole dish.
- Sprinkle 1 ½ cups of shredded cheddar cheese on top.
- Layer half of the crushed Doritos over the cheese, followed by the meat mixture.
- Top with the remaining Doritos and sprinkle with the rest of the cheese.
- Bake for 20 minutes until bubbly.
