Ground Beef Taco Casserole

Ingredients

The casserole

  • 2 pounds ground beef
  • 1 medium onion, chopped
  • 1 tablespoon minced garlic
  • ¼ cup taco seasoning
  • 1 teaspoon sea salt
  • 2 teaspoons apple cider vinegar
  • 2 cans (10-ounce) Ro-tel diced tomatoes & green chilies
  • 1 can (16-ounce) refried beans
  • 12 ounces shredded cheddar cheese
  • 6 ounces crushed Doritos

For serving

  • to taste diced tomatoes
  • to taste scallions
  • to taste sour cream
  • to taste more Doritos
  • to taste avocado
  • to taste shredded lettuce
  • to taste cilantro

Instructions

  1. Preheat the oven to 350°F and spray a 9 x 13 casserole dish with cooking spray.
  2. In a large skillet, cook the ground beef over medium-high heat for 5 minutes.
  3. Add the chopped onion and cook for an additional 5 minutes until the onion is tender and the beef is browned.
  4. Add minced garlic and cook for 30 seconds.
  5. Stir in taco seasoning, salt, and apple cider vinegar, then add one can of Ro-tel tomatoes and cook for 3 more minutes.
  6. In a bowl, mix the second can of Ro-tel with refried beans.
  7. Spread the bean mixture in the bottom of the prepared casserole dish.
  8. Sprinkle 1 ½ cups of shredded cheddar cheese on top.
  9. Layer half of the crushed Doritos over the cheese, followed by the meat mixture.
  10. Top with the remaining Doritos and sprinkle with the rest of the cheese.
  11. Bake for 20 minutes until bubbly.
