Ingredients

The main ingredients

  • 1 tablespoon olive oil
  • 3 tablespoons taco seasoning
  • 1 pound boneless skinless chicken breasts
  • 2 cups cooked brown rice
  • 15 ounces pinto beans
  • ½ cup canned or frozen mexi-corn
  • 2 medium bell peppers
  • 20 ounces diced tomatoes with green chilies
  • 4 ounces diced green chiles
  • 4 ounces diced jalapeños (optional)
  • 10 ounces salsa verde
  • cups shredded sharp cheddar cheese
  • ½ cup shredded pepper jack cheese
  • ½ bag tortilla chips

For garnish

  • to taste cilantro
  • to taste green onion
  • to taste avocado
  • to taste plain Greek yogurt

Instructions

  1. Preheat the oven to 375°F.
  2. Heat olive oil in a skillet over medium heat and season chicken breasts with taco seasoning.
  3. Sauté the chicken for 4-5 minutes on each side until browned and cooked through, then chop into small pieces.
  4. In a large bowl, mix the chopped chicken with brown rice, pinto beans, mexi-corn, bell peppers, tomatoes, green chiles, jalapeños, salsa verde, and remaining taco seasoning.
  5. Transfer the mixture to a greased baking dish, top with half of the cheeses, and layer with tortilla chips and the remaining cheeses.
  6. Bake for 15-20 minutes until the cheese is melted and bubbly.
  7. Garnish with cilantro, green onion, avocado, and Greek yogurt before serving.
