Instructions
- Preheat the oven to 375°F.
- Heat olive oil in a skillet over medium heat and season chicken breasts with taco seasoning.
- Sauté the chicken for 4-5 minutes on each side until browned and cooked through, then chop into small pieces.
- In a large bowl, mix the chopped chicken with brown rice, pinto beans, mexi-corn, bell peppers, tomatoes, green chiles, jalapeños, salsa verde, and remaining taco seasoning.
- Transfer the mixture to a greased baking dish, top with half of the cheeses, and layer with tortilla chips and the remaining cheeses.
- Bake for 15-20 minutes until the cheese is melted and bubbly.
- Garnish with cilantro, green onion, avocado, and Greek yogurt before serving.
