Ingredients

Chicken and Fajita Vegetables

  • 2 tbsp Avocado Oil or Olive Oil
  • 8 oz Chicken Breast
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Chili Powder
  • ½ tsp Ground Cumin
  • ½ tsp Kosher Salt
  • 2 cups sliced Bell Pepper
  • 1 cup roughly chopped Onion

Rice Bowl and Toppings

  • 2 cups Cooked Rice
  • 1 cup canned Black Beans
  • ½ fresh Avocado
  • Lime Wedges for squeezing over the bowls

Cilantro Lime Sauce

  • ½ cup Plain Greek Yogurt or Sour Cream
  • ½ cup Cilantro
  • 1 tbsp Mayonnaise
  • 2 tsp fresh Lime Juice
  • ½ tsp Kosher Salt

Instructions

  1. Make the cilantro lime sauce by blending Greek yogurt, cilantro, mayonnaise, lime juice, and salt until smooth.
  2. Prep the chicken and vegetables by cutting them into bite-sized pieces.
  3. Cook the bell peppers and onion in a skillet with oil until softened and slightly charred.
  4. Add the chicken and seasonings to the pan and cook until the chicken is browned and cooked through.
  5. Build the bowls by placing cooked rice in each bowl and topping with the chicken mixture, black beans, cherry tomatoes, avocado, and cilantro lime sauce.
