Ingredients

The main components

  • 1 lb. Boneless Chicken Breast
  • 1 cup Basmati Rice
  • 1 can Black Beans
  • 1 each Avocado, Sliced
  • 1 tbsp. Sour Cream
  • 2 tbsp. Pico De Gallo
  • 1 cup Shredded Mexican Mixed Cheese

The spices

  • 1 tsp. Oregano
  • 1 tsp. Paprika
  • 2 tsp. Chili Powder
  • ½ tsp. Garlic Powder
  • ½ tsp. Ground Cumin
  • ¼ tsp. Onion Powder
  • ¼ tsp. Sugar
  • ¼ tsp. Red Pepper
  • ½ tsp. Sea Salt
  • ½ tsp. Black Pepper

Instructions

  1. Cook the Basmati Rice according to the instructions.
  2. While the rice is cooking, slice the avocado and set aside.
  3. In a small pot, heat the black beans until tender.
  4. Mix the spices in a bowl and season the chicken breast on both sides.
  5. Heat olive oil and butter in a pan over medium heat and cook the chicken for 4 minutes on each side.
  6. Once cooked, cut the chicken into small chunks.
  7. Layer the bowl with rice, black beans, chicken, cheese, pico de gallo, sour cream, and avocado.
