Healthy Shrimp Fajita Bowls

Instructions
- Slice the red onion and bell peppers, then add them to a large bowl.
- Pour olive oil over the veggies and add spices, tossing to coat.
- Heat a tablespoon of olive oil in a pan, then add the onion and bell pepper mixture, cooking until softened (about 7 minutes).
- While the veggies cook, rinse the rice and add it to a pot with water or broth, bringing it to a gentle boil.
- Reduce the heat, cover the pot, and let the rice cook for 20 minutes until fluffy.
- Transfer the cooked veggies to a plate, return the pan to heat, and add another tablespoon of olive oil.
- Add the shrimp to the pan and cook until pink (about 4 minutes).
- Assemble the fajita bowls by fluffing the rice and adding the shrimp, onions, and bell peppers.
