Healthy Shrimp Fajita Bowls

Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 3 pieces Bell Peppers, seeds removed and sliced
  • 1 piece Red Onion, sliced
  • 2 Tbsp Olive Oil
  • 2 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Kosher Salt
  • ½ tsp Black Pepper
  • 1 cup Basmati Rice, rinsed well
  • 2 cups Broth or Water

Instructions

  1. Slice the red onion and bell peppers, then add them to a large bowl.
  2. Pour olive oil over the veggies and add spices, tossing to coat.
  3. Heat a tablespoon of olive oil in a pan, then add the onion and bell pepper mixture, cooking until softened (about 7 minutes).
  4. While the veggies cook, rinse the rice and add it to a pot with water or broth, bringing it to a gentle boil.
  5. Reduce the heat, cover the pot, and let the rice cook for 20 minutes until fluffy.
  6. Transfer the cooked veggies to a plate, return the pan to heat, and add another tablespoon of olive oil.
  7. Add the shrimp to the pan and cook until pink (about 4 minutes).
  8. Assemble the fajita bowls by fluffing the rice and adding the shrimp, onions, and bell peppers.
