Instructions
- Whisk together the chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper, and salt in a small bowl.
- In a large zipper-top bag, combine shrimp, cilantro, lime juice, and fajita seasoning. Mash gently to coat the shrimp evenly and marinate for at least 30 minutes.
- Heat oil in a large skillet over medium-high heat until shimmering. Add shrimp and cook without moving for 1 to 2 minutes until opaque and pink on one side, then flip and cook for another 1 to 2 minutes.
- Remove shrimp from the skillet and set aside. Add bell peppers and onions to the skillet and cook until tender, about 5 minutes.
- Push the peppers and onions to one side, return the shrimp to the skillet, and serve with tortillas and desired toppings.
