Shrimp Fajitas

Ingredients

Fajita Seasoning

  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • to taste salt

Marinade

  • 2 pounds raw shrimp, peeled and deveined
  • ¼ cup minced cilantro
  • ¼ cup fresh lime juice

Fajitas

  • 2 tablespoons olive oil or vegetable oil
  • 3 large bell peppers (red, orange, yellow, or green), cut into strips
  • 1 large red onion, halved and thinly sliced
  • to taste tortillas, warmed for serving
  • to taste sour cream and hot sauce
  • to taste cilantro and lime wedges for serving

Instructions

  1. Whisk together the chili powder, cumin, paprika, garlic powder, onion powder, cayenne pepper, and salt in a small bowl.
  2. In a large zipper-top bag, combine shrimp, cilantro, lime juice, and fajita seasoning. Mash gently to coat the shrimp evenly and marinate for at least 30 minutes.
  3. Heat oil in a large skillet over medium-high heat until shimmering. Add shrimp and cook without moving for 1 to 2 minutes until opaque and pink on one side, then flip and cook for another 1 to 2 minutes.
  4. Remove shrimp from the skillet and set aside. Add bell peppers and onions to the skillet and cook until tender, about 5 minutes.
  5. Push the peppers and onions to one side, return the shrimp to the skillet, and serve with tortillas and desired toppings.
