Shrimp Fajitas
Ingredients
The shrimp and seasoning

large shrimp, peeled and deveined

The vegetables and tortillas

light olive oil or vegetable oil

small
yellow or red onion, halved and sliced

bell peppers
any color

2
cloves
garlic, minced

chopped fresh cilantro

flour tortillas, warmed

to taste
sliced avocado and crumbled queso fresco (optional)
Instructions
- Dry the shrimp with paper towels and place in a bowl.
- Add lime juice, chili powder, cumin, coriander, and cayenne pepper to the shrimp and toss.
- Heat 1½ Tbsp of olive oil in a skillet and sauté the onions for 2 minutes.
- Add the bell peppers to the skillet, season with salt and pepper, and sauté until crisp-tender for about 5-7 minutes.
- Transfer the peppers to foil to keep warm.
- Return the skillet to heat, add the remaining olive oil, and season the shrimp with salt and pepper.
- Cook the shrimp for 1½ minutes, then add garlic and cook until shrimp are done, about 1-2 minutes longer.
- Toss in cilantro and serve the shrimp filling over tortillas with avocado and queso fresco if desired.
