Shrimp Fajitas

Ingredients

The marinade

  • 1 lb Large shrimp (30/40, peeled and deveined)
  • 2 tbsp Fajita seasoning
  • ¼ cup Olive oil (divided)
  • ¼ cup Lime juice (about 2 limes)
  • 2 cloves Garlic (minced)

The fajitas

  • 1 medium Onion (sliced)
  • 2 medium Bell peppers (sliced into thin strips)

Optional garnishes

  • to taste Lime wedges
  • to taste Fresh cilantro

Instructions

  1. Combine shrimp, fajita seasoning, 2 tablespoons of olive oil, lime juice, and minced garlic in a bowl and toss to coat.
  2. Marinate the shrimp for at least 15 minutes but no longer than 30 minutes.
  3. Heat the remaining olive oil in a skillet over medium-high heat and sauté the bell peppers and onions until softened.
  4. Remove the vegetables from the skillet and set aside to keep warm.
  5. In the same skillet, add the marinated shrimp and cook until they turn pink and opaque.
  6. Return the sautéed onions and peppers to the skillet and toss to combine before serving.
