Ingredients

The main ingredients

  • 1 lb medium to large shrimp, peeled and deveined
  • 3 pieces bell peppers, seeded and sliced
  • 1 piece onion, sliced
  • 2 Tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 Tbsp lime juice
  • ¼ cup cilantro, chopped

Optional toppings

  • to taste avocado
  • to taste salsa
  • to taste sour cream
  • to taste cheese

Serving base

  • to taste warm tortillas or lettuce cups

Instructions

  1. Preheat the oven to 425°F and coat a large sheet pan with nonstick spray.
  2. Drizzle olive oil over the shrimp and veggies, then toss with the spices, salt, and pepper until evenly coated.
  3. Spread the shrimp and veggies in an even layer on the pan and bake for 8 to 10 minutes until the shrimp are pink and opaque.
  4. If you prefer softer veggies, bake them for 10 minutes before adding the shrimp and then bake for an additional 8 to 10 minutes.
  5. Drizzle fresh lime juice over the cooked shrimp and veggies, sprinkle with cilantro, and serve with tortillas or lettuce cups and desired toppings.
