Instructions
- Preheat the oven to 425°F and coat a large sheet pan with nonstick spray.
- Drizzle olive oil over the shrimp and veggies, then toss with the spices, salt, and pepper until evenly coated.
- Spread the shrimp and veggies in an even layer on the pan and bake for 8 to 10 minutes until the shrimp are pink and opaque.
- If you prefer softer veggies, bake them for 10 minutes before adding the shrimp and then bake for an additional 8 to 10 minutes.
- Drizzle fresh lime juice over the cooked shrimp and veggies, sprinkle with cilantro, and serve with tortillas or lettuce cups and desired toppings.
