Instructions
- Toss the shrimp with garlic powder, onion powder, oregano, chili powder, cumin, and salt in a bowl.
- Heat 1 ½ tablespoons of oil in a cast iron skillet until smoking.
- Add the sliced peppers and onion to the skillet and cook until charred and softened, about 5 minutes.
- Transfer the cooked vegetables to a plate.
- Add the remaining ½ tablespoon of oil to the skillet and cook the shrimp until pink and opaque, about 2-3 minutes on each side.
- Return the cooked peppers and onion to the skillet and stir to combine.
- Remove from heat and serve in tortillas with desired toppings.
