Ingredients

The shrimp and spices

  • 1 pound shrimp
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • 1 ½ teaspoon salt

The vegetables

  • 1 large onion
  • 3 pieces bell peppers (various colors)

The oil and tortillas

  • 2 tablespoons oil (divided)
  • 8-12 pieces flour tortillas

Instructions

  1. Toss the shrimp with garlic powder, onion powder, oregano, chili powder, cumin, and salt in a bowl.
  2. Heat 1 ½ tablespoons of oil in a cast iron skillet until smoking.
  3. Add the sliced peppers and onion to the skillet and cook until charred and softened, about 5 minutes.
  4. Transfer the cooked vegetables to a plate.
  5. Add the remaining ½ tablespoon of oil to the skillet and cook the shrimp until pink and opaque, about 2-3 minutes on each side.
  6. Return the cooked peppers and onion to the skillet and stir to combine.
  7. Remove from heat and serve in tortillas with desired toppings.
