Ingredients

The salad

  • ½ cup salad greens (romaine, iceberg or butter lettuce), chopped
  • 1 6-ounce grilled BBQ chicken breast, sliced
  • ½ cup canned cannellini beans, rinsed and drained
  • 2 small tomatoes, diced
  • 1 cup corn kernels (frozen and thawed, grilled, or fresh)
  • ¼ cup fresh cilantro, chopped
  • sliced jalapeño pepper
  • ¼ cup cotija cheese

The tortilla strips

  • 2 white corn tortillas
  • to taste cooking spray
  • to taste kosher salt
  • to taste chili powder
  • to taste garlic salt

The dressing

  • cup good quality BBQ sauce
  • 1 lime juice
  • 2 tablespoons rice wine vinegar
  • to taste honey

Instructions

  1. Add the chopped lettuce to a large bowl and top with sliced grilled chicken, cannellini beans, diced tomatoes, corn, and cilantro.
  2. Spray both sides of the corn tortillas with cooking spray, season with kosher salt, chili powder, and garlic salt, then bake until lightly browned.
  3. Cool the tortillas, cut them into strips, and sprinkle over the salad.
  4. In a small bowl, whisk together BBQ sauce, lime juice, and rice wine vinegar, then sweeten with honey to taste.
  5. Pour the dressing over the salad, mix well, and garnish with additional cilantro, cotija cheese, and sliced jalapeños.
