Ingredients

  • 6 slices Bacon
  • 4 small Corn tortillas (optional)
  • 2 heads Romaine lettuce (chopped)
  • 1 cup Cherry tomatoes (cut in half)
  • 3 large Hard boiled eggs (chopped)
  • 1 lb Cooked chicken breasts (cut into 1/2-inch cubes or shredded)
  • 8 oz Colby jack cheese (cut into 1/2-inch cubes)
  • ¼ cup Corn kernels (optional)
  • ¼ cup Black beans (optional)
  • 1 large Avocado
  • ½ cup Ranch dressing
  • cup BBQ sauce
  • 1 tbsp Fresh chives (optional; chopped)

Instructions

  1. Cook the bacon in the oven until crispy, then chop or crumble it.
  2. If using corn tortillas, cut them into strips, spray with cooking spray, and bake until crispy.
  3. Arrange the chopped lettuce on a serving platter or individual plates.
  4. Top the lettuce with cherry tomatoes, bacon, hard boiled eggs, chicken, cheese, corn, black beans, avocado, and tortilla strips.
  5. Drizzle ranch dressing and BBQ sauce over the salad, and sprinkle with chives if desired.
