Ingredients

The rice

  • 2 cups long grain rice
  • 3 cups water

The vegetables

  • 1 lb frozen broccoli florets, thawed

The seasonings

  • 2 Tbsp butter
  • ½ tsp salt
  • ¼ tsp garlic powder
  • tsp cayenne pepper (optional)
  • to taste freshly cracked pepper

The cheese

  • ¼ cup grated Parmesan
  • 1 cup shredded sharp cheddar

Instructions

  1. 1. Cook the rice by adding it to a large pot with water, bringing it to a boil, then simmering for 15 minutes and letting it rest for 5 minutes.
  2. 2. While the rice cooks, chop the thawed broccoli florets into small pieces.
  3. 3. Fluff the cooked rice with a fork and mix in the butter, salt, garlic powder, cayenne, and cracked pepper until combined.
  4. 4. Gently fold in the chopped broccoli into the rice mixture.
  5. 5. Add the Parmesan and cheddar cheeses, folding to combine, and adjust seasoning if necessary.
  6. 6. Serve immediately.
