Cheesy Crockpot Chicken and Rice

Ingredients

  • 1 cup long grain brown rice
  • ¼ cup chopped onions
  • 3 cups chicken broth
  • cups cream of chicken soup
  • pounds skinless chicken breasts
  • 1 teaspoon garlic powder
  • ½ teaspoon ground oregano
  • ½ teaspoon thyme
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 3 cups frozen mixed vegetables
  • ½ cup shredded cheddar cheese
  • 1 spray cooking oil spray

Instructions

  1. 1. Spray the bottom of the slow cooker with cooking oil spray.
  2. 2. Add the rice, chicken broth, cream of chicken, and chopped onions to the slow cooker.
  3. 3. Top with the chicken breasts and sprinkle the spices and seasonings throughout.
  4. 4. Cook on High for 2 to 3 hours (or Low for 4 to 6 hours) until the rice is soft and all liquid has been absorbed.
  5. 5. Open the pot and remove the chicken, then shred or slice it into cubes.
  6. 6. Return the chicken to the pot along with the frozen vegetables and shredded cheese.
  7. 7. Place the lid back on and slow cook on High for an additional 10-15 minutes until the veggies are soft and the cheese has melted.
