avocado, peeled, pitted + thinly sliced

fresh vegetables (cucumbers, lettuce, carrots, bell peppers), thinly sliced, diced or cut into matchsticks

Instructions
- Prepare the Thai Mango Dipping Sauce by blending all ingredients except basil and cilantro until smooth, then add the herbs and pulse until chopped. Refrigerate until ready to serve.
- Squeeze lime juice over the sliced avocado to prevent browning.
- Set up an assembly line with all the vegetables ready to use.
- Soak each rice paper wrapper in warm water for 5 to 10 seconds, then place on a flat surface.
- Layer the wrapper with avocado slices, fresh herbs, and vegetables. Season with salt and pepper.
- Fold the ends of the wrapper to the center and roll tightly without ripping.
- Place each finished spring roll on a platter and cover with foil to keep them moist.
- Serve the spring rolls with the mango dipping sauce and chopped peanuts if desired.
