Avocado Vegetable Summer Rolls

Ingredients

The rolls

  • 6 pieces spring roll rice wrappers
  • 4 ounces rice noodles, cooked
  • 4 ounces extra-firm tofu, sliced into strips
  • 1 piece ripe avocado, sliced
  • 2 pieces ripe peaches, or 1 ripe mango, sliced
  • ½ piece watermelon radish, very thinly sliced (optional)
  • to taste fresh herbs (such as basil, Thai basil, and/or mint)
  • to taste sesame seeds

The dipping sauce

  • 1 recipe Basil Coconut Dipping Sauce
  • to taste tamari (optional, for serving)
  • to taste sriracha (optional, for serving)

Instructions

  1. Fill a shallow glass baking dish with warm water.
  2. Submerge a rice paper wrapper in the warm water for 7 seconds and lay it on a damp kitchen towel.
  3. Place some noodles, tofu, avocado, peaches, radish, herbs, and sesame seeds in the center of the wrapper.
  4. Fold the bottom of the wrapper over the filling and tuck it under.
  5. Fold the sides over the filling and continue rolling to form a summer roll.
  6. Repeat with the remaining rice papers.
  7. Serve with Basil Coconut Dipping Sauce, tamari, and sriracha if desired.
