spring roll rice wrappers

cooked rice noodles

extra-firm tofu, sliced into strips

peaches or 1 ripe mango, sliced

Instructions
- Prepare the basil coconut sauce by blending coconut milk, basil, cashew butter, lime juice, jalapeño, garlic, ginger, and salt in a food processor until smooth.
- Fill a shallow dish with warm water and soak one rice paper for 7 seconds before laying it on a damp kitchen towel.
- Place your desired fillings in the center of the wrapper, fold the bottom over the filling, tuck it in, and roll it up tightly.
- Repeat the rolling process with the remaining wrappers and fillings.
- Serve the summer rolls with the basil coconut sauce and optional tamari and sriracha on the side.
