Ingredients

The marinade

  • 4 tablespoons sake
  • 1 teaspoon soy sauce

The sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon sake
  • 1 tablespoon mirin
  • 1 tablespoon sugar
  • 1 teaspoon ginger

The chicken

  • 4 pieces chicken thighs

Instructions

  1. Marinate the chicken in a mixture of 3 tablespoons sake and 1 teaspoon soy sauce for 20 minutes.
  2. In a saucepan, combine the remaining sake, soy sauce, mirin, and sugar, and heat until the sugar dissolves.
  3. Remove from heat and stir in ginger.
  4. Drain the chicken and coat it with cornstarch before cooking.
  5. Cook the chicken in a skillet until done, then serve over rice with the sauce and slaw.
