Penne with White Beans and Greens

Ingredients

The pasta

  • 8 ounces uncooked bean penne pasta
  • 4 cups water

The sauce

  • 1 tablespoon extra-virgin olive oil
  • ½ medium onion, diced
  • 3 medium garlic cloves, minced
  • 1 ½ teaspoons dried oregano
  • ¼ teaspoon black pepper
  • cup kalamata olives, drained
  • ¼ cup sun-dried tomatoes, chopped
  • 1 15-ounce can white beans
  • 1 8-ounce bunch fresh greens, sliced
  • ½ lemon juiced
  • a pinch kosher salt (optional)

Instructions

  1. Boil water in a medium pot, then cook the pasta for 7 minutes or until al dente.
  2. Drain the pasta and keep it warm in the pot.
  3. In a skillet, heat olive oil and sauté onions, garlic, oregano, and black pepper for 4 minutes.
  4. Add olives, sun-dried tomatoes, and white beans, and sauté for an additional 3 minutes.
  5. Stir in the greens, lemon juice, and cooked pasta, cooking until greens are wilted.
  6. Serve immediately.
