Instructions
- Heat oil in a large skillet over medium heat and cook the onion until translucent.
- Add garlic and cook until fragrant.
- Stir in kale and cook until wilted.
- Add white beans, tomato paste, and vegetable broth, mashing some beans for texture.
- Bring to a boil, then reduce heat and simmer until liquid is reduced.
- Turn off heat and mix in cheese, salt, crushed red pepper, and lemon juice.
- Serve with additional cheese, lemon slices, and toasted bread if desired.
