  • ½ medium onion, diced
  • 4 large cloves garlic, minced
  • 3 cups chopped kale
  • 3 cups white beans, drained and rinsed if canned
  • ¼ cup tomato paste
  • 1 ½ cups vegetable broth
  • ¼ cup grated parmesan cheese or pecorino romano cheese or nutritional yeast
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon crushed red pepper flakes or to taste
  • 1 tablespoon lemon juice

Optional for serving

  • to taste shaved parmesan or pecorino romano cheese
  • to taste lemon slices
  • to taste toasted bread

Instructions

  1. Heat oil in a large skillet over medium heat and cook the onion until translucent.
  2. Add garlic and cook until fragrant.
  3. Stir in kale and cook until wilted.
  4. Add white beans, tomato paste, and vegetable broth, mashing some beans for texture.
  5. Bring to a boil, then reduce heat and simmer until liquid is reduced.
  6. Turn off heat and mix in cheese, salt, crushed red pepper, and lemon juice.
  7. Serve with additional cheese, lemon slices, and toasted bread if desired.
