Smoky and Creamy White Beans with Greens

Ingredients

The base

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • to taste sea salt
  • to taste ground black pepper
  • 3 cloves garlic, minced
  • 2 teaspoons chopped fresh thyme

The beans and greens

  • 3 cups cooked navy beans, drained and rinsed
  • 1 cup vegetable stock or filtered water
  • 4 cups chopped mixed greens (such as chard, spinach or kale)
  • 4-5 drops liquid smoke (optional)
  • 2 teaspoons apple cider vinegar

Instructions

  1. Heat a large skillet over medium-high heat and add the olive oil.
  2. Cook the onion, salt, and pepper for 5 minutes until slightly golden.
  3. Cover and reduce heat to low, cooking the onion for another 5 minutes until soft.
  4. Stir in the garlic and cook for 3-4 minutes until fragrant.
  5. Add the thyme and cook for 2 minutes.
  6. Add the beans and vegetable stock/water, bring to a boil.
  7. Reduce heat to low, cover, and simmer for 5 minutes.
  8. Remove the lid and cook for another 5 minutes until creamy and beans are soft.
  9. Crush some beans for a creamier texture if desired.
  10. Add the greens and cook until wilted.
  11. Stir in the apple cider vinegar and adjust seasoning if needed.
  12. Serve immediately with crusty bread.
