Smoky and Creamy White Beans with Greens

The beans and greens

cooked navy beans, drained and rinsed

vegetable stock or filtered water

chopped mixed greens (such as chard, spinach or kale)

liquid smoke (optional)

apple cider vinegar
Instructions
- Heat a large skillet over medium-high heat and add the olive oil.
- Cook the onion, salt, and pepper for 5 minutes until slightly golden.
- Cover and reduce heat to low, cooking the onion for another 5 minutes until soft.
- Stir in the garlic and cook for 3-4 minutes until fragrant.
- Add the thyme and cook for 2 minutes.
- Add the beans and vegetable stock/water, bring to a boil.
- Reduce heat to low, cover, and simmer for 5 minutes.
- Remove the lid and cook for another 5 minutes until creamy and beans are soft.
- Crush some beans for a creamier texture if desired.
- Add the greens and cook until wilted.
- Stir in the apple cider vinegar and adjust seasoning if needed.
- Serve immediately with crusty bread.
