Ingredients

  • 1 tablespoon extra virgin olive oil
  • ½ large red onion, finely diced
  • 4 cloves garlic, minced
  • ¾ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon Italian seasoning
  • cup dry white wine
  • 1 15 ounce can cannellini beans
  • 24 ounce jar tomato sauce
  • 1 teaspoon liquid smoke
  • ½ cup spinach
  • squeeze lime (optional)

Instructions

  1. Heat olive oil in a pan over medium-high heat.
  2. Sauté red onions and garlic for 5 minutes until onions are translucent.
  3. Add sea salt, black pepper, and Italian seasoning, then reduce heat to medium.
  4. Cook for a few minutes, then add white wine and stir to combine; cook for 3 minutes.
  5. Add cannellini beans, tomato sauce, and liquid smoke; stir thoroughly.
  6. Bring to high heat for 2 minutes, then reduce to a simmer for 8 minutes, stirring occasionally.
  7. Turn off heat, stir in spinach, and let it sit for 2 minutes to wilt.
  8. Taste and adjust seasoning with more salt or lime juice if desired. Serve with your favorite starches.
