Ingredients

Whipped White Beans

  • 2 cups cooked white beans, drained and rinsed
  • 1 cup mixed leafy herbs, packed (basil, parsley, chives)
  • 1 tablespoon cashew butter or tahini
  • 2 tablespoons lemon juice
  • 1 teaspoon Tamari
  • to taste sea salt and ground black pepper
  • 3 tablespoons olive oil
  • 2 cloves garlic, sliced
  • if needed cold water

Smoky Grilled Mushrooms

  • 8 ounces mixed mushrooms
  • to taste olive oil
  • to taste Tamari
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder

For Serving

  • optional chopped herbs
  • optional baby or micro greens
  • optional aged balsamic vinegar
  • optional finely chopped shelled pistachios
  • to taste flaky sea salt, such as Maldon
  • to serve crostini/toasted or grilled bread

Instructions

  1. Combine white beans, leafy herbs, cashew butter, lemon juice, Tamari, salt, and pepper in a food processor.
  2. Heat olive oil in a skillet and fry sliced garlic until golden, then add to the food processor.
  3. Process until the mixture is silky smooth, adding cold water if necessary.
  4. Preheat the grill and prepare mushroom skewers, drizzling with olive oil and seasoning.
  5. Grill the mushrooms until browned, flipping halfway through.
  6. Spread the whipped beans on a serving plate, top with grilled mushrooms and optional garnishes, and serve with crostini.
