Smoky Harissa White Bean Dip

Instructions
- Combine the white beans, roasted red bell pepper, garlic, harissa paste, salt, smoked paprika, cumin, and pumpkin seeds in a food processor and blend until smooth.
- Taste and adjust seasoning, adding more harissa if desired.
- Transfer the dip to a serving bowl and garnish with feta cubes.
- In a pan, heat olive oil, add pistachios, and warm for about 3 minutes, then add cumin seeds and toast for another minute.
- Spoon the pistachio mixture over the dip and scatter with mint leaves.
- Serve with pita, chips, or crackers.
