Ingredients

The dip

  • 14 ounce canned white beans, drained and rinsed
  • ½–1 cup roasted red bell pepper
  • 2 cloves garlic
  • 1 tablespoon harissa paste
  • ½ teaspoon salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ cup pumpkin seeds, pistachios, or cashews

Garnish

  • ½ cup feta cubes
  • 1 tablespoon olive oil
  • 2 tablespoons pistachios
  • 1 teaspoon cumin seeds
  • to taste fresh mint leaves

Instructions

  1. Combine the white beans, roasted red bell pepper, garlic, harissa paste, salt, smoked paprika, cumin, and pumpkin seeds in a food processor and blend until smooth.
  2. Taste and adjust seasoning, adding more harissa if desired.
  3. Transfer the dip to a serving bowl and garnish with feta cubes.
  4. In a pan, heat olive oil, add pistachios, and warm for about 3 minutes, then add cumin seeds and toast for another minute.
  5. Spoon the pistachio mixture over the dip and scatter with mint leaves.
  6. Serve with pita, chips, or crackers.
