Ingredients

The vegetables and nuts

  • 8 oz green beans, trimmed and cut into 1-2 inch pieces
  • 8 oz cremini or button mushrooms, trimmed and quartered
  • ¼ cup chopped walnuts

The seasoning

  • 1 spray olive oil cooking spray
  • to taste salt
  • to taste pepper
  • 2 tsp truffle oil (optional)

Instructions

  1. Preheat the oven to 400°F.
  2. Combine green beans, mushrooms, and walnuts on a rimmed baking sheet.
  3. Spray the mixture with olive oil and season with salt and pepper.
  4. Roast in the oven for 15 minutes, stirring halfway through.
  5. Remove from the oven and stir in truffle oil, if using.
