Roasted Green Beans with Lemon and Garlic

Ingredients

The green beans

  • 1 pound French green beans (haricots verts) or regular green beans

The marinade

  • 1 tablespoon extra virgin olive oil or avocado oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Magic Mushroom Powder or Diamond Crystal kosher salt
  • ¼ teaspoon freshly ground black pepper

Optional toppings

  • 1 lemon cut into wedges
  • 2 tablespoons toasted almond slivers

Instructions

  1. Preheat the oven to 425°F convection or 450°F non-convection.
  2. In a large bowl, mix together olive oil, lemon juice, minced garlic, Magic Mushroom Powder or kosher salt, and black pepper.
  3. Add the green beans to the bowl and toss to coat them evenly.
  4. Spread the green beans in a single layer on a rimmed baking sheet.
  5. Roast the green beans in the oven for 10-15 minutes for thinner beans or 15-20 minutes for thicker beans, flipping every 5 minutes.
  6. Check for tenderness and charred spots to determine doneness.
  7. Serve the green beans with lemon wedges and optionally sprinkle with toasted almond slivers.
