Ingredients

The green beans

  • 1 pound fresh green beans or haricots verts

The seasonings

  • teaspoons extra-virgin olive oil
  • ¼ teaspoon kosher salt
  • teaspoon ground black pepper

The toppings

  • 3 tablespoons sliced almonds (optional)
  • 2 tablespoons freshly grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet.
  2. Add the green beans to the baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat evenly.
  3. Spread the green beans in a single layer on the baking sheet.
  4. Roast the green beans for 15 minutes without disturbing them.
  5. Shake the pan to turn the beans and roast for an additional 5 to 7 minutes until crisp-tender.
  6. While the green beans roast, toast the almonds in a small saucepan over low heat until golden.
  7. Once the beans are done, sprinkle with toasted almonds and Parmesan cheese before serving.
