Ingredients

The green beans

  • 1 pound fresh green beans, trimmed

The seasoning

  • 1 teaspoon extra-virgin olive oil
  • ¼ teaspoon sea salt
  • to taste freshly ground black pepper

Optional toppings

  • ½ teaspoon fresh lemon juice
  • 1 clove garlic, grated (optional)
  • to taste grated Parmesan cheese
  • to taste toasted sliced almonds
  • to taste lemon zest

Instructions

  1. Preheat the oven to 425°F and line two baking sheets with parchment paper.
  2. Divide the green beans evenly between the baking sheets.
  3. Drizzle with olive oil and sprinkle with salt and pepper, then toss to coat.
  4. Spread the beans evenly on the baking sheets.
  5. Roast for 14 to 16 minutes, or until tender and browned.
  6. If using, drizzle with lemon juice and toss to coat, adding grated garlic if desired.
  7. Transfer to a serving dish and top with Parmesan cheese, almonds, and lemon zest if desired.
