Green Beans with Hazelnuts and Lemon

Ingredients

  • 2 pieces shallots, sliced into thin rings
  • 2 tablespoons olive oil (or sub part butter)
  • 1 pound green beans
  • 1 cup broth or stock
  • ½ teaspoon kosher salt
  • to taste cracked pepper
  • ¼ cup toasted crushed hazelnuts
  • zest of one lemon lemon
  • 1–2 teaspoons truffle oil (optional)

Instructions

  1. Heat oil in a sauté pan over medium heat and sauté shallots until golden and fragrant.
  2. Add green beans, stock, salt, and pepper, then bring to a simmer and cover to steam for 7-8 minutes.
  3. Remove the lid, bring the liquid to a boil and reduce slightly.
  4. Mix in lemon zest, hazelnuts, and drizzle with optional truffle oil.
  5. Taste and adjust salt if necessary, then serve immediately.
