Ingredients

The green beans

  • 1.5 pounds green beans
  • 2.5 teaspoons Kosher salt

The cooking ingredients

  • 2 tablespoons extra virgin olive oil
  • ½ cup sliced almonds
  • 1 shallot minced
  • 1 clove garlic
  • ½ teaspoon black pepper
  • 1 lemon zest
  • 2-3 wedges fresh lemon

Instructions

  1. 1. Boil water in a large saucepan with 2 teaspoons of salt.
  2. 2. Add green beans and cook for 2-3 minutes until bright green, then drain and rinse with cold water.
  3. 3. Heat olive oil in a skillet over medium-high heat.
  4. 4. Add almonds and stir to coat with oil, then add shallot, garlic, pepper, and ½ teaspoon salt, cooking until softened.
  5. 5. Add the green beans to the skillet and toss with the almond mixture, cooking for 2-3 minutes until heated through.
  6. 6. Transfer to a serving bowl, sprinkle with lemon zest, and serve with lemon wedges.
