Green Beans Almondine

Instructions
- 1. Bring a large pot of salted water to a boil and prepare a bowl of ice water.
- 2. Blanch the green beans in boiling water for 2 minutes, then transfer them to the ice water to stop cooking.
- 3. Drain the green beans and dry them with a towel.
- 4. Toast the sliced almonds in a dry skillet over medium heat for 2 to 3 minutes until golden brown, then set aside.
- 5. In the same skillet, add olive oil, shallot, and salt, sautéing for 2 minutes.
- 6. Add the blanched green beans and sauté for an additional 2 to 4 minutes until warmed through.
- 7. Remove from heat, stir in grated garlic and lemon juice, and season with salt and pepper.
- 8. Transfer to a serving dish and top with toasted almonds before serving.
