Ingredients

The vegetables

  • 12 ounces green beans, preferably haricot verts, trimmed
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove grated garlic
  • 1 shallot thinly sliced

  • 2 tablespoons sliced almonds

The cooking essentials

  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon sea salt, plus more for seasoning

Instructions

  1. 1. Bring a large pot of salted water to a boil and prepare a bowl of ice water.
  2. 2. Blanch the green beans in boiling water for 2 minutes, then transfer them to the ice water to stop cooking.
  3. 3. Drain the green beans and dry them with a towel.
  4. 4. Toast the sliced almonds in a dry skillet over medium heat for 2 to 3 minutes until golden brown, then set aside.
  5. 5. In the same skillet, add olive oil, shallot, and salt, sautéing for 2 minutes.
  6. 6. Add the blanched green beans and sauté for an additional 2 to 4 minutes until warmed through.
  7. 7. Remove from heat, stir in grated garlic and lemon juice, and season with salt and pepper.
  8. 8. Transfer to a serving dish and top with toasted almonds before serving.
