White Beans with Mushrooms and Marinara

Ingredients

  • 8 oz. mushrooms
  • 2 Tbsp olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 2 cloves garlic
  • 2 cups marinara
  • 2 15 oz. cans butter beans
  • ½ tsp dried basil
  • 1 pinch crushed red pepper
  • 4 oz. mozzarella

Instructions

  1. Preheat the oven to 400ºF.
  2. Wash and slice the mushrooms, then sauté them in olive oil with salt and pepper until wilted.
  3. Mince the garlic and add it to the skillet, sautéing for an additional 2 minutes.
  4. Drain and rinse the butter beans, then add them to the skillet along with the marinara, basil, and red pepper.
  5. Stir to combine and heat through for about 5 minutes.
  6. Shred the mozzarella and sprinkle it on top of the skillet mixture.
  7. Cover with foil and bake for 5-7 minutes until the cheese is melted.
  8. Remove the foil, switch to broil, and broil for a few minutes to brown the cheese.
  9. Serve hot, optionally with garlic bread.
