Marcella's Stewy White Beans

Ingredients

Soaking and Cooking the Beans

  • 3 tablespoons salt
  • 1 teaspoon salt
  • 4 quarts water
  • 1 lb dried white beans (cannellini or great northern)
  • 1 whole onion (peeled and halved)
  • a few sprigs thyme
  • 1 clove garlic (smashed)
  • 1 leaf bay leaf

For the Stewy Beans

  • ΒΌ cup olive oil
  • 3 cloves garlic (minced)
  • 1 small bundle sage (optional)
  • 3 cups cooked white beans (drained)
  • to taste salt
  • to taste pepper
  • 1 cup water or chicken/vegetable stock (plus more as needed)
  • to serve bread
  • to serve grated Parmigiano Reggiano

Instructions

  1. Dissolve salt in water and soak the beans for 8 to 24 hours.
  2. Drain and rinse the beans, then place them in a pot with onion, thyme, garlic, bay leaf, and remaining salt.
  3. Cover with water by three inches, bring to a boil, then simmer for about 45 minutes until cooked through.
  4. Let beans cool in their cooking liquid, then discard thyme, bay leaf, and onion.
  5. In a soup pot, heat olive oil and cook minced garlic until pale gold.
  6. Add the cooked beans, a pinch of salt, and pepper, then cover and simmer for 5 to 6 minutes.
  7. Uncover, add water or stock, and simmer for another 6 to 8 minutes until some beans break down.
  8. Adjust seasoning, and serve the beans over toasted bread with grated cheese.
