Marcella's Stewy White Beans

Instructions
- Dissolve salt in water and soak the beans for 8 to 24 hours.
- Drain and rinse the beans, then place them in a pot with onion, thyme, garlic, bay leaf, and remaining salt.
- Cover with water by three inches, bring to a boil, then simmer for about 45 minutes until cooked through.
- Let beans cool in their cooking liquid, then discard thyme, bay leaf, and onion.
- In a soup pot, heat olive oil and cook minced garlic until pale gold.
- Add the cooked beans, a pinch of salt, and pepper, then cover and simmer for 5 to 6 minutes.
- Uncover, add water or stock, and simmer for another 6 to 8 minutes until some beans break down.
- Adjust seasoning, and serve the beans over toasted bread with grated cheese.
