Italian Baked Beans and Greens

The beans and sauce

cannellini beans or white beans (cooked, or 2 x 14-ounce cans, drained)

marinara sauce

The greens and cheese

big handful
lacinato kale (torn, thick stems removed) or baby spinach (optional)

parmesan or pecorino cheese

slices
fresh mozzarella (or sub grated, or burrata cheese, optional)
Instructions
- Preheat the oven to 375°F.
- In a baking dish, combine the white beans with olive oil, salt, pepper, and chili flakes.
- Add the marinara sauce and water, then mix well. Stir in the kale if using.
- Level the mixture and sprinkle with pecorino or parmesan cheese, adding mozzarella if desired.
- Bake uncovered for 25-35 minutes until bubbling and golden. Optionally broil for a few minutes for extra color.
- Garnish with fresh basil and serve with crusty bread and a salad.
