Greek Style Homemade Baked Beans

Ingredients

The beans

  • 2 14 oz cans pinto beans

The sauce

  • 1 tbsp olive oil
  • ½ yellow onion diced
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 28 oz can diced tomatoes
  • ½ cup water
  • ¾ tsp salt
  • ¼ tsp pepper
  • ½ tsp dried thyme
  • 1 tsp oregano
  • ¼ tsp chili flakes

Garnishes

  • to taste fresh parsley
  • to taste crumbled feta cheese
  • to taste olive oil drizzle
  • as needed favourite toasted bread

Instructions

  1. Preheat the oven to 375°F.
  2. Heat olive oil in an ovenproof pot over medium heat, then add onion and garlic, sautéing until softened.
  3. Stir in the spices and sauté until fragrant.
  4. Add tomato paste and cook for 1 minute.
  5. Mix in tomatoes, water, and beans, then bring to a simmer.
  6. Transfer the pot to the oven and bake for 30-40 minutes until thickened.
  7. Top with parsley, feta, and olive oil, and serve with toasted bread.
