Instructions
- Preheat the oven to 375°F.
- Heat olive oil in an ovenproof pot over medium heat, then add onion and garlic, sautéing until softened.
- Stir in the spices and sauté until fragrant.
- Add tomato paste and cook for 1 minute.
- Mix in tomatoes, water, and beans, then bring to a simmer.
- Transfer the pot to the oven and bake for 30-40 minutes until thickened.
- Top with parsley, feta, and olive oil, and serve with toasted bread.
