Instructions
- Soak the navy beans in cold water overnight.
- Drain the beans and place them in a saucepan, covering with water by about 2 inches. Bring to a boil, then simmer for about 30 minutes until almost tender.
- Preheat the oven to 350°F and heat olive oil in a Dutch oven over medium heat.
- Add onion, apple, savory, salt, and pepper to the Dutch oven and cook until softened, about 5 minutes.
- Drain the beans and add them to the Dutch oven, along with diced tomatoes, molasses, mustard, bay leaves, and water.
- Stir everything together, cover, and cook in the oven for about 6 hours, stirring occasionally, until the beans are soft and the sauce is thick.
- Let the beans rest at room temperature for about an hour before serving.
