Old Fashioned Baked Beans

Ingredients

The beans

  • 1.3 lb white navy beans
  • 8 cups water

The sauce

  • 1 tbsp extra-virgin olive oil
  • 1 medium onion, finely chopped
  • 2 apples peeled and finely diced
  • 1 tbsp dried savory
  • 1 tbsp salt
  • 1 tsp ground black pepper
  • 1 large can diced tomatoes (28 oz)
  • ½ cup blackstrap molasses
  • 1 tbsp Dijon mustard
  • 3-4 pieces bay leaves

Instructions

  1. Soak the navy beans in cold water overnight.
  2. Drain the beans and place them in a saucepan, covering with water by about 2 inches. Bring to a boil, then simmer for about 30 minutes until almost tender.
  3. Preheat the oven to 350°F and heat olive oil in a Dutch oven over medium heat.
  4. Add onion, apple, savory, salt, and pepper to the Dutch oven and cook until softened, about 5 minutes.
  5. Drain the beans and add them to the Dutch oven, along with diced tomatoes, molasses, mustard, bay leaves, and water.
  6. Stir everything together, cover, and cook in the oven for about 6 hours, stirring occasionally, until the beans are soft and the sauce is thick.
  7. Let the beans rest at room temperature for about an hour before serving.
