Boston Baked Beans

Instructions
- Soak the beans in water for 6 to 8 hours, then drain and rinse.
- Simmer the beans in fresh water with salt until tender, then drain and reserve the liquid.
- Cook the bacon in a Dutch oven until crispy, then add the onion and garlic until softened.
- Combine the beans with the bacon mixture, molasses, tomato paste, mustard, and reserved bean cooking liquid.
- Cover and bake in a preheated oven at 375°F for about 3 hours, checking every 45 minutes.
- Stir in the vinegar and season to taste before serving.
