Boston Baked Beans

Ingredients

The beans

  • 2 cups dry white beans
  • 2 teaspoons kosher salt

The sauce

  • 6 ounces bacon
  • 1 medium onion
  • 4 cloves garlic
  • ¼ cup unsulphured molasses
  • ¼ cup tomato paste
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • to taste freshly ground black pepper

Instructions

  1. Soak the beans in water for 6 to 8 hours, then drain and rinse.
  2. Simmer the beans in fresh water with salt until tender, then drain and reserve the liquid.
  3. Cook the bacon in a Dutch oven until crispy, then add the onion and garlic until softened.
  4. Combine the beans with the bacon mixture, molasses, tomato paste, mustard, and reserved bean cooking liquid.
  5. Cover and bake in a preheated oven at 375°F for about 3 hours, checking every 45 minutes.
  6. Stir in the vinegar and season to taste before serving.
