Honey Baked Beans

Ingredients

The beans

  • 1 cup dry navy beans or kidney beans
  • 1 inch by 2 inch piece of kombu
  • 1 clove garlic, minced

The sauce

  • 14 ounce can diced tomatoes
  • 1 tablespoon bacon fat
  • 1 tablespoon soy sauce
  • 2 tablespoons honey
  • ½ teaspoon smoked paprika

Instructions

  1. Soak the beans and kombu in water overnight.
  2. Drain and rinse the beans in the morning, then return them to a pot with 3 cups of water and the kombu.
  3. Simmer gently for about an hour until the beans are tender.
  4. Remove the kombu and add the remaining ingredients to the pot.
  5. Simmer uncovered over low heat for another 30 to 40 minutes until the mixture thickens.
  6. Serve warm.
