Southern Baked Beans with Bacon

Ingredients

The beans

  • 1 can (12 oz) pork and beans
  • 1 can (12 oz) red kidney beans
  • 1 can (12 oz) pinto beans

The vegetables

  • 1 medium onion, diced
  • ½ each jalapeno, diced
  • ½ each bell pepper, diced
  • 1 teaspoon garlic, minced

The sauces and seasonings

  • ½ cup (4 fl oz) BBQ sauce
  • ½ cup (4 fl oz) ketchup
  • ½ tablespoon mustard
  • 2-4 tablespoons brown sugar
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon molasses
  • 2 teaspoons cajun seasoning
  • to taste pepper

The meat

  • 4-6 thick cut bacon

Instructions

  1. Preheat the oven to 350°F.
  2. If using bacon, cut it into 3-4 strips and par-cook for about 3 minutes.
  3. Drain oil, leaving about 2 tablespoons of bacon fat, then sauté the onion, jalapenos, and bell pepper for 3-4 minutes until translucent.
  4. Add the pork n beans, red kidney beans, pinto beans, BBQ sauce, ketchup, mustard, brown sugar, Worcestershire sauce, molasses, cajun seasoning, minced garlic, and pepper. Stir until fully combined.
  5. Pour the mixture into an ungreased 9 x 13 baking dish, top with par-cooked bacon, and bake uncovered for 35 to 45 minutes until bubbly.
