Ingredients

The beans

  • 3 cups canned navy beans with liquid
  • ½ pound dried beans

The vegetables

  • 1 cup chopped onions
  • 1 cup chopped green pepper

The liquids and seasonings

  • teaspoons sea salt
  • ½ cup broth
  • ¼ teaspoon liquid smoke
  • 7-8 cups veggie broth
  • ½ cup tomato paste
  • ¼ cup molasses
  • 1 tablespoon hot sauce or apple cider vinegar
  • ½ teaspoon ground mustard
  • ½ teaspoon ground black pepper

For sautéing

  • 1 drizzle oil or veggie broth
  • ½ cup broth for sautéing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the onion with salt and a drizzle of oil or broth until brown and caramelized.
  3. Add the green pepper, liquid smoke, and ½ cup broth, and cook until softened.
  4. Incorporate the beans, remaining broth (if using dried), tomato paste, molasses, hot sauce/vinegar, mustard, and pepper.
  5. Cook the mixture until reduced by about half and thickened, approximately 30 minutes.
  6. If cooking on the stove top, taste and check for doneness, adjusting time as needed.
  7. If baking, transfer to a square baking dish and bake for 2-3 hours, covering with foil if needed to prevent burning.
  8. Once done, serve with your favorite sides.
