Instructions
- Soak the beans overnight in a bowl of water.
- The next day, drain the soaking water and place the beans in a large pot.
- Add the water, apple juice, tomato paste, dark molasses, vinegar, mustard, liquid smoke, and spices to the pot.
- Cover and cook over medium heat for 1 ½ hours, stirring occasionally and adding water as needed.
- Season with salt if desired.
- Transfer the beans to a casserole dish and bake uncovered at 350°F for 30 minutes.
