Cheesy White Beans and Kale

Ingredients

  • 1 tablespoon extra virgin olive oil
  • ½ medium sweet yellow onion, diced
  • 3 vegetarian Italian sausages, sliced
  • 5 cups shredded kale
  • ½ teaspoon kosher salt
  • 3 cloves garlic, minced
  • ½ teaspoon dry oregano
  • 15.5 ounces can great northern beans, drained and rinsed
  • 15 ounces can crushed tomatoes
  • ¼ teaspoon black pepper
  • 1 tablespoon sherry cooking wine
  • 1 ½ cups shredded asiago cheese
  • fresh chopped parsley for garnish (optional)
  • toasted baguette slices for serving (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat and add diced onion, sliced sausage, kale, and salt; cook until the onion is golden and the kale is wilted.
  2. Add garlic and oregano, sautéing until aromatic.
  3. Pour in drained beans, crushed tomatoes, and black pepper; bring to a gentle simmer and cook uncovered for at least 10 minutes.
  4. Preheat the oven to 375°F and lightly oil a baking dish.
  5. Stir in sherry cooking wine, transfer the mixture to the baking dish, and smooth into a single layer.
  6. Top with shredded cheese and bake for 10-15 minutes until the cheese is golden and bubbling.
  7. Remove from the oven, sprinkle with parsley and additional black pepper before serving.
