Instructions
- Heat olive oil in a large skillet over medium heat and add diced onion, sliced sausage, kale, and salt; cook until the onion is golden and the kale is wilted.
- Add garlic and oregano, sautéing until aromatic.
- Pour in drained beans, crushed tomatoes, and black pepper; bring to a gentle simmer and cook uncovered for at least 10 minutes.
- Preheat the oven to 375°F and lightly oil a baking dish.
- Stir in sherry cooking wine, transfer the mixture to the baking dish, and smooth into a single layer.
- Top with shredded cheese and bake for 10-15 minutes until the cheese is golden and bubbling.
- Remove from the oven, sprinkle with parsley and additional black pepper before serving.
